Looking for a dessert to take to a family party or social event? This cake is easy to make and delicious. The raisins and honey make the cake moist and sweet, but not sickeningly sweet. It tastes great as is, or you could dress it up with a glaze or icing. Give it a try, and let me know what you think in the comments section below!
Ingredients
- 1/2 C coconut flour
- 1 C. almond flour
- 1/2 C. Raisins
- 1/2 C. pumpkin
- 1/4 cup + 2 Tbs. coconut oil
- 2 room- temperature eggs
- 1/4 cup raw honey
- 1/2 tsp. baking soda
- 1/2 tsp. raw apple cider vinegar
- Pinch of sea salt salt
- 1 TBSP ground cinnamon
- 1/4 tsp nutmeg
- 1 tsp. vanilla extract
Instructions
- Set oven to 350 degree F
- In a small bowl, mix spices, flours and baking soda thoroughly.
- In a larger bowl, mix wet ingredients. Make sure you mix it for a few minutes, until coconut flour is fully absorbed.
- Combine wet and dry ingredients, and add in raisins.
- Grease a standard cake pan with coconut oil.
- Using a spatula, put batter into pan.
- Place in oven and bake for between 25-35 minutes, or until fully raised, golden brown on top and fork comes out clean.
